Cranberry and Star Anise Poptail

Ingredients

180 ml (3/4 cup) of water

60 g (1/2 cup) of granulated sugar

2 star anise

125 ml (1/2 cup) of Patience Fruit & Co pure organic cranberry juice

30 ml (2 tablespoons) of freshly squeezed lemon juice

60 ml (1/4 cup) of Aperol

A poptail is a cross between a popsicle and a cocktail. Our secret to making poptails even better is to dip them in prosecco between every bite!

This poptail is an homage to the traditional Aperol spritz, a cocktail widely consumed as an aperitif in many Italian cities. Our variation uses local ingredients, delightfully combining Canada’s cranberries and Aperol. Star anise also provides a delicious warmth to this festive and unique cocktail. You’ll love how elegant it looks and tastes!

Steps

  1. In a small, heavy-bottomed saucepan, heat the water, sugar, star anise, and Patience Fruit & Co pure organic cranberry juice, and lemon juice until the sugar is completely melted. Remove from the heat and stir in the Aperol. Let cool for 15 minutes, then fish out the star anise.

  2. Pour the mixture into popsicle molds. Add the sticks then freeze for 6 hours or overnight.

  3. To serve, pour the Prosecco into Old Fashioned glasses. Dip a popsicle in and enjoy immediately.
