Ingredients

200 g chorizo, skin removed, sliced into rounds

200 g red peppers, marinated in oil, drained and cut into strips

1 540-ml (19-oz) can chickpeas, rinsed and drained

40 g (1/3cup ) Patience Fruit & Co 3 Fruit Blend, Sweetened with Cane Sugar

2.5 ml (1/2 teaspoon) smoked paprika

1 garlic clove, peeled and finely chopped

125 ml (1/2 cup) parsley, finely chopped

Ground pepper to taste

For the dressing:

30 ml (2 tablespoons) olive oil

15 ml (1 tablespoon) red wine vinegar

10 ml (2 teaspoons) maple syrup

Enjoy your salad as is, on a bed of romaine, or with toasted croutons on the side. Yum!
