A healthy meal in one hand and a good book in the other

If you work full time during the week, you probably don’t often feel like preparing long, elaborate recipes. Especially if your kids are gone and you’re flying solo for the night – when that happens, all we want to do is spend the night relaxing with a good book.

Kudos to you if you still want to maintain your healthy eating habits on your night alone! We have delicious, healthy, no-fuss recipes that can be prepared in minutes and eaten without having to interrupt your reading.

 

  1. Naan pizza with blueberries, goat cheese, caramelized onions and cranberries

    Have you heard of naan bread? This wheat-based Indian flatbread is baked on an oven’s scorching surface. It’s a great side dish to currys, dahls, and other stews, but it can also be used as the base for another delicious meal: pizza!

    Ah, the classic croque-monsieur. This timeless grilled sandwich is everybody’s favourite! With only 5 ingredients and a few minutes of prep and cooking time, you can get a grilled cheese sandwich that’s to die for. All you need is a panini press, an oven or a skillet to achieve cheesy, melty goodness!

    This decadent recipe is a bold new take on the classic sandwich. The sliced American cheese is replaced by melty brie. Crispy pancetta and dried cranberries add a slightly sweet, tart taste that make this sandwich a must-have. This sandwich is exactly what you need to kick your luxurious night in up a notch!
