Wild Blueberry Gin and Tonic

Ingredients

For the secret blueberry juice syrup

250 ml (1 cup) Patience Fruit & Co 100% Pure Wild Blueberry Juice

250 ml (1 cup) sugar

For the gin and tonic

1 1/2 oz gin

1/2 oz blueberry juice syrup

90 ml (3 oz) tonic water (we used 1642 Tonic)

Thin slices of lime (for garnish)

Preparation time 5 minutes
Cooking time Cooking: 10 minutes / Chilling (for the syrup): 1 to 24 hours Portions Makes 1 cocktail

In honour of locally produced drinks, here’s a gin and tonic that’s just bursting with flavour, plus our secret house-made recipe for wild blueberry juice syrup. Think local, drink local – cheers!

For the secret blueberry juice syrup

250 ml (1 cup) Patience Fruit & Co 100% Pure Wild Blueberry Juice

250 ml (1 cup) sugar

For the gin and tonic

1 1/2 oz gin

1/2 oz blueberry juice syrup

90 ml (3 oz) tonic water (we used 1642 Tonic)

Thin slices of lime (for garnish)

Steps

  1. For the secret blueberry juice syrup
    Pour wild blueberry juice into a pan with sugar. Simmer over low heat till sugar has completely dissolved. Place in the fridge to cool (syrup will keep for up to 2 months, refrigerated in a tightly sealed container).

  2. For the gin and tonic
    Fill highball glass with ice.
    Add gin and wild blueberry syrup.
    Stir with bar spoon.
    Top with tonic water and garnish with lime.
