Tomato Platter with Feta and Cranberry Tapenade

Ingredients

For the tapenade

125 ml (1/2 cup) fresh parsley, finely chopped

80 ml (1/3 cup) Patience Fruit & Co dried sliced cranberries with no added sugar

80 ml (1/3 cup) store-bought fried onions

60 ml (1/4 cup) whole pumpkin seeds

1/2 green onion, snipped with scissors

7.5 ml (1/2 tablespoon) extra-virgin olive oil

Pepper and salt to taste

 

For the tomato platter

3 or 4 fresh tomatoes, different varieties, sliced

250 g feta, sliced

Pepper to taste

Preparation time 20 minutes Portions 2 servings

Here’s a great recipe to serve with drinks, as a main course, or as a simple side dish with fish or chicken. The  tapenade, made from our delicious no-sugar-added cranberries, really brings out the flavour of juicy red tomatoes.

Delicious alongside a nice piece of steamed salmon or with a big hunk of fresh bread to soak up the juices!

Steps

  1. For the tapenade
    Combine all tapenade ingredients in a bowl. Add salt and pepper to taste. Set aside.

  2. For the tomato platter
    Arrange the tomatoes and feta on a large serving platter with several dollops of tapenade on top. Check seasoning, then serve.
