Thousand-Hole Crêpes with 3 Fruit Blend

Ingredients

375 ml (1 ½ cups) buckwheat flour

500 ml (2 cups) apple must

60 ml (1/4 cup) sugar

1 pouch (8 g) instant yeast

Oil for cooking

15 to 30 g (2 to 4 tablespoons) Patience Fruit & Co 3 Fruit Blend, finely chopped

Thousand-hole crêpes (also known as baghrir) are made from flour and baker’s yeast (the yeast used to make bread or pizza). When you add a bubbly liquid, you’ll see a lot of holes appear in your crêpes (at least a thousand, but who’s counting?). Apple must, the liquid ingredient used in this recipe, will have the desired effect.

You can add the 3 Fruit Blend while you’re making the crêpes or just before serving (or both!). It makes them extra yummy – and it’s fun!

Steps

  1. Gently mix flour, apple must and instant baker’s yeast in a big bowl for 2 minutes, or until all the flour has been absorbed.

  2. Let the batter rest for 30 to 60 minutes at room temperature before you continue. Cover the bowl with a clean tea towel or food-safe plastic wrap.

  3. Coat a pan with a little vegetable oil. Cook crêpes over medium heat, pouring about 30 ml (2 tablespoons) of batter into the middle of the pan. Sprinkle with Patience Fruit & Co 3 Fruit Blend. You’ll see the holes appear while the crêpes are cooking.

  4. Cook crêpes on one side. You can also flip them over and cook the other side for a few seconds.

  5. Serve with maple syrup or a mixture of honey and melted butter. Top with fresh berries and more 3 Fruit Blend.
