Quinoa Krispies with Wild Blueberries

– 30 ml (2 tablespoons) margarine

– 15 ml (1 tablespoon) coconut oil

– 1000 ml (4 cups) mini marshmallows

– 1000 ml (4 cups) puffed quinoa

– 250 ml (1 cup) puffed brown rice

– 15 ml (1 tablespoon) chia seeds

– 30 ml (2 tablespoons) hemp seeds

– 80 ml (1/3 cup) Patience Fruit & Co dried blueberries

– 60 ml (¼ cup) semi-sweet chocolate chips

Frankly, nothing beats homemade snacks. So get out your apron and wooden spoons – forget the store-bought stuff. Today we’re making Quinoa Krispies – a super-easy recipe that will take you right back to your childhood!

– 15 ml (1 tablespoon) coconut oil

– 250 ml (1 cup) puffed brown rice

Steps

  1. In a large pot, melt the margarine and the coconut oil over low heat. Add the marshmallows and stir until completely melted. Remove from heat.

  2. Add the puffed quinoa, puffed brown rice, chia seeds, hemp seeds, and dried blueberries. Mix well.

  3. Using a wooden spoon, spread and flatten the mixture into a 8.5 X 8.5-inch glass dish. Set aside.

  4. Melt the chocolate. Set aside.

  5. Cut the quinoa krispies into bars. Drizzle the melted chocolate over the bars.

  6. If you want, sprinkle with dried blueberries.
