Ingredients

1/4 cup extra-virgin olive oil

1/3 cup pure maple syrup

1/3 cup pumpkin puree

1 teaspoon pure vanilla extract 

1 teaspoon pumpkin pie spice

1 pinch fine salt

2 cups old fashioned rolled oats

1/2 cup Patience Fruit & Co 3-Fruit Blend 

1/2 cup slivered almonds 

1/2 cup pepitas

2 tablespoons chia seeds

Pumpkin Granola Bars. Just in time for back to school season, a pumpkin spiced twist on homemade granola bars! It features crunchy nuts & the 3-fruit blend for natural sweetness. This recipe stores well to enjoy throughout the week.

1/4 cup extra-virgin olive oil

Steps

  1. Preheat the oven to 350(f) degrees. Line an 8-inch square baking dish with parchment paper.

  2. In a large mixing bowl whisk together olive oil, maple syrup, pumpkin puree, vanilla extract, pumpkin pie spice & salt until blended.

  3. Add the oats, dried fruit, slivered almonds, pepitas & chia seeds. Stir until evenly mixed.

  4. Transfer mixture to the prepared baking dish & press down to flatten. Bake for 25 to 30 minutes, until the edges are golden.

  5. Let cool to room temperature before removing from pan & slicing.

Recommendations

Store in a covered container refrigerated for up to a week or freezer for up to a month.
