Preheat the oven to 350(f) degrees. Line an 8-inch square baking dish with parchment paper.

In a large mixing bowl whisk together olive oil, maple syrup, pumpkin puree, vanilla extract, pumpkin pie spice & salt until blended.

Add the oats, dried fruit, slivered almonds, pepitas & chia seeds. Stir until evenly mixed.

Transfer mixture to the prepared baking dish & press down to flatten. Bake for 25 to 30 minutes, until the edges are golden.

Let cool to room temperature before removing from pan & slicing.
