Pineapple chicken (slow-cooker recipe)

Ingredients

For the sauce

15 ml (1 tablespoon) cornstarch

60 ml (1/4 cup) vegetable broth  

30 ml (2 tablespoons) ketchup

30 ml (2 tablespoons) low-sodium soy sauce

30 ml (2 tablespoons) apple cider vinegar

45 ml (3 tablespoons) brown sugar or maple syrup

 

For the chicken

1 kg (2 lb) skinless deboned chicken thighs, cut into 2.5 cm (1 in.) pieces  

30 ml ( 2 tablespoons) olive oil

1/2 pineapple, peeled and cut into pieces, about 500 ml l (2 cups) 

4 green onions, sliced (white and green parts separately)

15 ml (1 tablespoon) fresh ginger, finely chopped

2 cloves garlic, chopped

1 red pepper, seeded and diced

1 jalapeno pepper, seeded and finely diced

Salt and pepper

Garnishes

Fresh parsley, snipped with scissors

You can never have too many quick and easy recipes in your repertoire. These days, the slow cooker can be your best friend when you’re wondering what to make for dinner.

To put a little sunshine on your plate, we decided to combine some ingredients that qualify as comfort food, with a tropical twist. This slow-cooker recipe for Tropical Chicken with Pineapple gets a great boost from our Tropical Delight Active Blend. The mix of dried cranberries, cashews, pumpkin seeds, sunflower seeds and coconut adds terrific fresh flavour and crunch. 

Don’t have any fresh pineapple? Canned is fine – just make sure you use the same quantity.

Steps

  1. For the sauce
    Dilute cornstarch in broth in a bowl. Add remaining ingredients and mix well. Set aside.

  2. Heat oil in a large non-stick pan and brown chicken over high heat. Add salt and pepper to taste. Transfer chicken to slow cooker.

  3. Place pineapple, white parts of green onions, ginger, garlic and sauce in slow cooker. Cover and cook on Low for 4 hours.

  4. Before serving, set slow cooker to High. Add red pepper, green parts of onions and Tropical Delight Active Blend. Mix well and continue cooking, with the cover on, for 20 to 30 minutes. Adjust seasonings.

  5. Serve with rice, sprinkled with parsley.

Recommendations

Don’t stir the chicken once it’s cooked or it may fall apart.
