BING BANG BLUE Muffins with Dates and Dried Blueberries

Ingredients

150 g (1/2  cup) date purée

1 egg

75 g (¼ cup) Wowbutter

460 g (2 cups) plant-based beverage (or milk)

2 teaspoons baking powder

1 tablespoon caramel essence

Pinch of salt

240 g (2 cups) all-purpose flour (or gluten-free flour)

40 g (1/4 cup) chia seeds

85 to 170 g (1 to 2 packages) Dried Wild Blueberries Sweetened with Apple Juice

100 g (1/2 cup) date pieces

50 g (1/2 cup) pumpkin seeds

Optional: a handful of caramel chips

Preparation time 30 minutes
Cooking time 25 minutes at 350°F Portions 12 muffins

This super easy recipe can be made gluten-free, dairy-free, nut- and peanut-free. The bar’s been set high… and you’ll be on a bit of a high when you taste these muffins, just bursting with dates and dried blueberries, the BING BANG BLOU (blue)! A whirlwind of nutrition. Now where did I put that wooden spoon?

Steps

  1. Preheat oven to 180°C (350°F).

  2. Mix all ingredients thoroughly in a bowl with a wooden spoon.

  3. Line a muffin tin with parchment or silicone cups to avoid sticking.

  4. Pour dough into muffin tins. Decorate with dried blueberries, date halves or pumpkin seeds.

  5. Bake for about 25 minutes.

  6. Take a deep breath – wow, does it ever smell great in here! Yay for dried blueberries…
