You don’t have to be the world’s greatest chef to get rave reviews for this recipe for Brie with cranberries. Just mix all the topping ingredients in a small pan… and take your time. Spread the topping on the cheese and put it in the oven while you continue to relax. It’s the perfect recipe for good food in good company at any time of the year.

In a small saucepan, sauté onion and garlic in butter for about 10 minutes or until translucent. Add salt and pepper to taste.

Add water, sugar and cranberries. Bring to a boil and let simmer over medium heat for about 15 minutes. Remove from heat and set aside.

Place rack in the middle of the oven. Preheat oven to 180°C (350°F).

Place cheese in ovenproof dish or on a piece of aluminum foil about 30 cm (12 in.) square. Spread topping over cheese. Place on a baking sheet and cover cheese with aluminum foil.

Bake in the oven for about 10 minutes. Sprinkle with fresh parsley and walnuts. Place whole hot Brie in the centre of the table, surrounded by bread and crackers.
