Healthy Coriander Rice Bowl with Salmon

Ingredients

For the grilled salmon

600 g filet of salmon with skin, cut into four pieces

15 ml olive oil

5 ml (1/2 teaspoon) onion powder

5 ml (1/2 teaspoon) garlic powder

1 ml (1/4 teaspoon) cumin

For the coriander rice

500 ml (2 cups) water

250 ml (1 cup) long-grain jasmine rice, rinsed and drained

2 green onions, finely sliced

125 ml (1/2 cup) coriander, chopped

50 g (1/2 cup) Patience Fruit & Co Tropical Delight Active Blend

45 ml (3 tablespoons) olive oil

Juice of one lime

Salt and pepper to taste

To assemble the dish

500 ml (2 cups) red cabbage, finely chopped

500 ml (2 cups) spinach, finely chopped

2 avocados, pitted and cubed

45 ml (3 tablespoons) olive oil

Juice of one lime

To assemble the dish

500 ml (2 cups) red cabbage, finely chopped

500 ml (2 cups) spinach, finely chopped

2 avocados, pitted and cubed

Steps

  1. For the grilled salmon
    Place rack in the middle of the oven. Preheat oven to 180°C (400°F).

  2. Line baking sheet with parchment paper or silicone liner. Place salmon filet on the sheet, brush with olive oil and add spices. Sprinkle with salt and pepper to taste.

  3. Bake in the oven for about 30 minutes.

  4. For the coriander rice
    Combine rice and water in a small pan. Bring to a boil, cover and turn down the heat. Simmer for about 20 minutes.

  5. Fluff rice with a fork. Add remaining ingredients for the coriander rice. Mix well.

  6. To assemble the dish
    Divide rice among 4 bowls. Add red cabbage and spinach. Top with a piece of grilled salmon, add avocado cubes and serve.
