Fresh organic cranberries & orange bruschetta

Ingredients

For the fresh organic cranberry bruschetta

2 bags (2 x 227g) of Organic Fresh Whole Cranberries

The zest and juice of 2 oranges

¼ cup (60 ml) of honey

2 teaspoons (10 ml) of fresh ginger, grossly chopped

½ cup (8,5 g) of fresh coriander, grossly chopped

For the assembling

1 to 2 bread loafs, cut in ½ po (1 cm) slices – for 30 or 60 bites.

½ cup (125 ml) of olive oil

180 g of brie cheese, sliced

Orange zest

Honey

Fresh rosemary branches

Preparation time 15 minutes

During the Holiday season, we always need that elegant & practical recipe when we receive surprise guests. But we think tomato and onion based bruschetta is too classical for Christmas… So why not make a bruschetta with our delicious fresh organic cranberries?

This recipe will give you about 30 bites. But during the Holidays, you may want to double or even triple the recipe! This bruschetta recipe can easily give you extra, and you can easily keep some in the fridge.

The zest and juice of 2 oranges

¼ cup (60 ml) of honey

2 teaspoons (10 ml) of fresh ginger, grossly chopped

½ cup (8,5 g) of fresh coriander, grossly chopped

For the assembling

1 to 2 bread loafs, cut in ½ po (1 cm) slices – for 30 or 60 bites.

Steps

  1. In a saucepan set over medium heat, put the cranberries, the zest, the orange juice, the honey and the ginger.
    Cook at medium heat for 10 minutes, or until the cranberries start exploding.

  2. Remove from heat. Add the coriander. Let it cool or put the preparation in the fridge.

  3. Preheat the oven at 350°F (180°C). Place the bread slices on a cooking plate. Baste with olive oil.

  4. Cook in the oven for 15 minutes or until the croutons are lightly toasted.

  5. On each crouton, put a slice of brie cheese and 1 tablespoon (15 ml) of bruschetta.

  6. Cook in the oven for 5 minutes. Garnish with rosemary, honey and orange zest.

Recommendations

If the croutons aren’t all used, you can keep them on the counter or they can be freezed and heated when served.

The bruschetta can be prepared in advance and kept for up to 5 days in the fridge in an airtight container.
