1 oz Patience Fruit & Co 100% Pure Wild Blueberry Juice
0.75 oz lemon juice
0.5 oz maple syrup
1 egg white

Garnish: Patience Fruit & Co Whole Dried Wild Blueberries

Pour all ingredients except sparkling water into the shaker.

Shake vigorously, the first time with no ice cubes (dry shake).

Add ice cubes, then shake vigorously again.

Filter into a highball glass filled with ice cubes.

Add sparkling water carefully so you get a collar of foam.

Garnish with dried blueberries.
