6 slices (30g) of pancetta
4 slices thick country bread
softened butter
½ cup (50g) Patience Fruit & Co Whole & Soft dried cranberries
½ cup fresh arugula or spinach

As the kids head back to school, sometimes we wish they were grown-up enough to make their own lunches! In the meantime, here’s a super easy croque-monsieur recipe that your kids will surely enjoy.
Ingredients
150g brie
6 slices (30g) of pancetta
4 slices thick country bread
softened butter
½ cup (50g) Patience Fruit & Co Whole & Soft dried cranberries

Slice the brie.

Place a cast iron skillet or a non-stick pan over medium heat. Add pancetta slices and cook for a few minutes, turning pancetta over once to grill evenly on both sides. Set aside on a plate topped with paper towels.

Butter one side of two bread slices, and place one of them, butter-side down, in the pan.

Place half of all remaining sandwich ingredients on top of the bread. Cover with the second slice, butter-side up. Cook on both sides, turning over once until cheese is melted. Repeat the process to prepare the second sandwich.
