Brown Rice Bowl with Herbs, Grilled Chicken and Summer Vegetables

Ingredients

4 chicken breasts, grilled on the BBQ, hot or cold

Local vegetables of your choice, as much as you like depending on the season and what’s fresh from the market.

 

For the dressing

45 ml (3 tablespoons) cider vinegar

75 ml (1/3 cup) vegetable oil

Salt and pepper

 

For the brown rice bowl

500 ml (2 cups) brown rice, cooked (90 g = 1 cup rice, uncooked) – warm or cold

40 g (1/4 cup) Patience Fruit & Co. Classic Dried Cranberries

6 green onions, sliced at an angle

Fresh parsley, chopped (to taste)

Salt and pepper

Are you enjoying your summer veggie basket? The only problem is, sometimes you don’t feel inspired to cook what’s in the basket this week. Here’s a versatile recipe for herbed brown rice with grilled chicken that you can make with pretty much any veggies from your farmer or the market. Of course, our delicious cranberries add the final touch with their subtle sweetness.

Steps

  1. For the vegetables and chicken
    Oil the BBQ rack and grill chicken till well cooked, and cook seasonal vegetables to your liking. Set aside. (This step can be prepared up to 24 hours ahead of time if you plan to serve the rice bowls cold.)

  2. For the dressing
    Mix oil and vinegar in a small bowl. Add salt and pepper. Set aside.

  3. To prepare the rice
    Mix cooked brown rice in a big bowl with dried cranberries, green onions and parsley. Add a little salt and a lot of pepper. Add half the dressing and mix well.

  4. To assemble bowls
    Place rice in bottom of bowls. Arrange grilled vegetables and sliced chicken on top. Add remaining dressing if desired, and sprinkle with cranberries for a fabulous final touch.
