Ingredients
For the dressing:
1 clove garlic, peeled and minced
10 ml (2 teaspoons) of Dijon mustard
60 ml (1/4 cup) of extra-virgin olive oil
30 ml (2 tablespoons) of white wine vinegar
Salt and pepper
For the salad:
60 g (1/4 cup) of Patience Fruit & Co Classic dried cranberries, sweetened with apple juice
25 g (1/2 cup) of toasted slivered almonds
2 green onions, minced
4 cooked bacon slices, chopped finely (or back bacon)*
1 litre (4 cups) of raw broccoli florets (about 1 head of broccoli)

This recipe goes beyond the ordinary leafy salad. Broccoli is perfect for jar salads because it stays green and crunchy for up to a week. You can eat it raw, or you can blanch it before putting in your jar. Slivered almonds are an excellent source of vegetable-based proteins. Dried cranberries and bacon give the salad a sweet-and-salty touch that makes it irresistible.
To store the salad, any 1-litre (4-cup) glass jar you have on hand will do. Our favourites are the ones that have a wide opening. For a children’s version, you can use a smaller plastic container that fits the size of their appetite.

For the dressing:
In a bowl, whisk all the ingredients together. Season with salt and pepper. Divide between 4 1-litre (4-cup) jars. -
For the salad:
In each jar, layer the cranberries, slivered almonds, green onions, bacon, and broccoli. Close the jars. -
To serve, shake the jars vigorously so to combine the salad ingredients and dressing. Transfer to a serving plate or enjoy straight from the jar.
Recommendations
* Back bacon (or Canadian bacon) is twice as lean as regular bacon and looks more like ham. It’s a great way to substitute the saltiness of bacon with less fat ending up on your plate.
