Breakfast Bagel with Tempeh Cretons

Ingredients

For the tempeh cretons

One package (198 g) plain tempeh

125 ml (1/2 cup) grated carrots

60 ml (1/4 cup) Patience Fruit & Co Sea Salt & Pepper Active Blend

30 ml (2 tablespoons) soy sauce

5 ml (1 teaspoon) Dijon mustard

A few drops of liquid smoke  (optional)

For the bagel

1 bagel, cut in half and toasted

5 ml (1 teaspoon) yellow mustard

Your favourite kind of microgreens

Preparation time 25 minutes Portions 250 ml (1 cup) cretons

Cretons are a traditional treat for many families – comfort food that brings back great memories. This classic Québécois dish is usually eaten cold for breakfast on toast, as a snack with crackers, or in a sandwich.

Our vegetarian version, made with tempeh, is a snap to make. Cretons are a good source of protein to start the day, and they’re delicious to boot (don’t forget the mustard!).

Steps

  1. Break tempeh into pieces. Combine tempeh, carrots, Active Blend, soy sauce, Dijon mustard and liquid smoke (if using) in the bowl of your food processor.

  2. Pulse ingredients until texture is grainy but smooth.

  3. Spread tempeh cretons on both halves of toasted bagel. Garnish with microgreens and yellow mustard.
