For the tempeh cretons
One package (198 g) plain tempeh
125 ml (1/2 cup) grated carrots
60 ml (1/4 cup) Patience Fruit & Co Sea Salt & Pepper Active Blend
30 ml (2 tablespoons) soy sauce
5 ml (1 teaspoon) Dijon mustard
A few drops of liquid smoke (optional)
For the bagel
1 bagel, cut in half and toasted
5 ml (1 teaspoon) yellow mustard

Our vegetarian version, made with tempeh, is a snap to make. Cretons are a good source of protein to start the day, and they’re delicious to boot (don’t forget the mustard!).

Break tempeh into pieces. Combine tempeh, carrots, Active Blend, soy sauce, Dijon mustard and liquid smoke (if using) in the bowl of your food processor.

Pulse ingredients until texture is grainy but smooth.

Spread tempeh cretons on both halves of toasted bagel. Garnish with microgreens and yellow mustard.
