Homemade Fruit Squares (roll-up style)

Ingredients

2 cups Patience Fruit & Co Bursting Blend dried fruit blend

2 cups  crispy puffed rice, plain

1 cup  unsweetened shredded coconut 

⅓ cup  coconut oil, melted

3 tbsp. maple syrup

2 cups Patience Fruit & Co Bursting Blend dried fruit blend

2 cups  crispy puffed rice, plain

1 cup  unsweetened shredded coconut 

⅓ cup  coconut oil, melted

3 tbsp. maple syrup

Steps

  1. In a food processor, combine the dried fruit, crispy puffed rice and shredded coconut until a dough is formed.

  2. Add the coconut oil and maple syrup, and then stir again to combine. The mixture doesn’t need to be completely smooth.

  3. Press the dough into a square pan covered with parchment paper and add toppings if desired (dried fruit, puffed rice, coconut flakes). Chill in the fridge for a minimum of 3 hours. Cut into 2” x 2” squares. The squares can be stored in the fridge for up to 6 days.
