Cauliflower Crust Pizza with Ricotta, Honey and Cranberries

Ingredients

For the crust:
Florets from one cauliflower, washed.
1/2 cup parmesan cheese, grated
1 teaspoon Italian-style fine herbs
1 large egg
Pepper and salt

For the topping:
1/2 tub (about 7oz) ricotta cheese
2 tablespoons honey
1/4 cup Patience Fruit & Co Whole and Juicy Dried Cranberries, sweetened with apple juice
Fresh basil

Preparation time 30 minutes
Cooking time 15 minutes Portions 1 pizza, about 12 in.

This cauliflower pizza is part main course, part dessert. It’s a little salty, a little sweet thanks to our dried cranberries – a great flavour contrast. The cauliflower crust makes a great change, and it’s super-nutritious, with a heaping portion of vegetables in each slice. Your guests will love it!

Steps

  1. Preheat oven to 450 F. Place oven rack on lowest rung.

  2. Place cauliflower in food processor bowl and process until florets are reduced to the size of grains of rice.

  3. Pour cauliflower into a large oven-to-microwave bowl and cook on high for 3 to 4 minutes. Set aside to cool.

  4. Drain cauliflower carefully. We suggest using a clean tea towel or paper towel to make sure you remove all the moisture.

  5. Mix cauliflower with remaining crust ingredients in a big bowl. Press the mixture onto a baking sheet to form a disk about one inch thick.

  6. Bake cauliflower crust for 15 to 20 minutes or until lightly browned. Remove crust from oven and top with ricotta and cranberries.

  7. Return pizza to oven to heat the cheese under the grill. Remove from oven. Drizzle with honey and garnish with fresh basil.
