Cranberry Bruschetta

Ingredients

½ cup Patience Fruit & Co Whole & Juicy Dried Cranberries, sweetened with apple juice

2 cups water

1 tbsp toasted pine nuts or pecans

Baguette, country-style loaf or other bread

Goat cheese, cream cheese or fresh mozzarella (warm version) or Brie cheese (hot version)

Parsley or chives

1 pinch thyme

Salt and pepper

Olive oil

Cooking time 5 to 10 min Portions 3 to 4

This simple bruschetta is a breeze to prepare and perfect as a cocktail nibble or a hearty snack. Serve it lukewarm or piping hot according to the chosen cheese or the occasion.

½ cup Patience Fruit & Co Whole & Juicy Dried Cranberries, sweetened with apple juice

1 tbsp toasted pine nuts or pecans

Baguette, country-style loaf or other bread

Goat cheese, cream cheese or fresh mozzarella (warm version) or Brie cheese (hot version)

Parsley or chives

1 pinch thyme

Salt and pepper

Steps

  1. Toast baguette or country-style bread in oven (cut in 2-bite servings).

  2. In a small pan, bring water to a boil. Add whole dried cranberries and let simmer gently 5 minutes. Turn off heat and let cool around 15 minutes.

  3. Drain cranberries and transfer to a bowl. Add toasted nuts, parsley or chives, and thyme. Season.

  4. Warm version with goat cheese, cream cheese or fresh mozzarella: When ready to serve, spread cheese on bread, top with cranberry garnish and drizzle with olive oil.

  5. Hot version with Brie: Place a slice of cheese on each toasted bread. Top with cranberry garnish and bake in oven until cheese melts. Drizzle with olive oil and serve.
