Chocolate Mousse for Two (salted caramel & Chococrunch Bites)

Ingredients

For the salted caramel

1/2 cup sugar

2 tablespoons water

1/3 cup unsalted butter, cubed

3/4 cup cooking cream

1 pinch sea salt

 

1 package Patience Fruit & Co Dark Chocolate and Raspberry Chococrunch Bites, coarsely chopped

 

For the chocolate mousse

2-oz chocolate (2 squares of baking chocolate, such as Baker’s)

1 tablespoon unsalted butter

1 egg yolk

1/2 cup whipping cream

1 teaspoon sugar

You can’t really celebrate love without sharing a chocolate dessert – and the experience is even more special when it’s a dessert designed for two, which we think is the ultimate romantic experience.

Our recipe for chocolate mousse with salted caramel and Chococrunch Bites is a cinch to prepare and can be made ahead of time…which really helps on a special day that you don’t want to spend slaving over a hot stove! 

Our velvety chocolate mousse and salted caramel make a delicious contrast to the crunchy bites. It’s a dessert that will go straight to his – or her – heart!

Ingredients

For the salted caramel

1/2 cup sugar

2 tablespoons water

1/3 cup unsalted butter, cubed

3/4 cup cooking cream

1 pinch sea salt

 

1 package Patience Fruit & Co Dark Chocolate and Raspberry Chococrunch Bites, coarsely chopped

 

For the chocolate mousse

2-oz chocolate (2 squares of baking chocolate, such as Baker’s)

1 tablespoon unsalted butter

1 egg yolk

1/2 cup whipping cream

1 teaspoon sugar

Steps

  1. Dissolve sugar in water in a pan over low heat. Bring to a boil. Whisk the mixture to stop sugar from crystallizing. Cook until caramel mixture turns a dark amber colour.

  2. Stir in butter. Add cream in a steady stream while you keep stirring. Add salt. Turn down the heat and let caramel cook for 1 minute without stirring. Remove caramel from the heat.

  3. Pour 125 ml (1/2 cup) of the salted caramel into a glass dish and place in fridge for at least 1 hour. (The rest of the caramel will keep in a tightly sealed container in the fridge for 1 week.)

  4. Chop 4 to 6 Chococrunch Bites into rough pieces. Sprinkle on top of caramel. Set aside.

  5. Melt chocolate with butter in a double boiler, stirring. Remove from the heat. Add egg yolk, whisking until the mixture is smooth. Set mixture aside to cool, in the fridge or at room temperature.

  6. Whip cream and sugar in a bowl with an electric mixer until firm peaks form.

  7. Gently fold whipped cream into the chocolate mixture, using a spatula.

  8. Spread mousse in glass dish and top with another layer of coarsely chopped Chococrunch Bites.

  9. Enjoy, with your sweetheart!
