Bento Box with Homemade Dried Cranberry Herb Cheese

Ingredients

For the homemade cranberry herb cheese

125 ml (1/2 cup) Greek yogurt, drained * (or the same quantity of store-bought labneh)  

60 ml (1/4 cup) Patience Fruit & Co Dried Sliced Cranberries, no added sugar, coarsely chopped  

A few sprigs of dill, finely chopped

A pinch of garlic powder

A pinch of salt

 

For the cucumber-smoked salmon rolls

1 Lebanese cucumber, cut into thin lengthwise strips (Lebanese cucumbers are small and thin-skinned)

150 g homemade cranberry herb cheese

300 g smoked salmon

A few sprigs of dill

 

For the Bento box

1/2 cup spinach leaves

Crackers of your choice, in different shapes

Cherry tomatoes, cut in 2

The Bento box is a  fresh twist on the lunch box. The concept comes from Japan: a box with several small compartments, which you fill with a variety of delectable morsels. But feel free to use any lunch container you have around the house…

The star of the Bento box here is our famous recipe for homemade cranberry herb cheese, made with our no-sugar-added dried cranberries. Of course, it’s equally delicious served with crackers and in our cucumber-smoked salmon rolls. We bet your lunch-mates will envy you!

 

Ingredients

For the homemade cranberry herb cheese

Steps

  1. For the homemade cranberry herb cheese
    Mix all ingredients in a bowl and set aside.

  2. For the cucumber-smoked salmon rolls
    Slice cucumber lengthwise, using a mandoline.
    With a paper towel, blot the moisture from the cucumber slices. Spread part of the cheese along each slice. Place slices of smoked salmon on top, lengthwise. Place a sprig of dill at one end, roll up and secure with a toothpick.

  3. To assemble the Bento box
    Form the rest of the cheese into a ball and place in one section of the Bento box. Scatter spinach leaves on the bottom. Place cucumber-smoked salmon rolls, crackers and cherry tomatoes in the other sections.

Recommendations

*To make Greek yogurt cheese, you need a big bowl, a sieve and a clean tea towel. Line sieve with tea towel and place over the bowl. Pour in yogurt and cover. Put in the fridge to drain for 4 to 12 hours. Yogurt cheese will keep for up to a week in the fridge.

You can find labneh, a yogurt cheese that’s pre-drained, at the grocery store. For this recipe, it’s the quick alternative.
