Deluxe Lobster Rolls with Cranberry Mayonnaise

Ingrédients

For the lobster mixture

450 g (1 lb) cooked lobster, cut into big pieces

45 ml (3 tablespoons) fresh mayonnaise

1 stalk of celery, finely diced

15 ml (1 tablespoon) Patience Fruit & Co Whole & Juicy Dried Cranberries, sweetened with apple juice

15 ml (1 tablespoon) fresh chives, snipped with scissors

5 ml (1 teaspoon) fresh tarragon, snipped with scissors

5 ml (1 teaspoon) Océan de saveurs seaweed (or a pinch of salt)

5 ml (1 teaspoon) lemon juice

To serve

40 g (3 tablespoons) butter, softened

4 large hot-dog buns from your specialty bakery 

8 leaves Boston lettuce

Lobster lovers agree that the classic way to eat lobster is … on a roll!  Here’s a recipe for a deluxe version with big pieces of fresh lobster, served on buns from your neighbourhood specialty bakery. 

To take the mayonnaise sauce to a whole new level, we added fresh herbs, salty seaweed from the coast, fresh chives and tarragon – and of course, our delicious whole juicy cranberries, gently sweetened with apple juice.

We don’t want to boast too much, this is probably the best lobster roll you’ll ever eat.
