Cranberry-Vanilla Smoothie with Almond, Cranberry & Cinnamon Granola

Ingredients

Smoothie

Two bananas, cut into rounds and frozen

30 ml (2 tbsp) creamy almond butter

60 ml (¼ cup) hemp seeds

250 ml (1 cup) frozen berries (strawberries, raspberries, blueberries, blackberries, cherries)

250 ml (1 cup) Patience Fruit & Co Pure Cranberry Juice

5 ml (1 tsp) vanilla extract

125 ml (½ cup) your choice of liquid: water, non-dairy milk beverage or fruit juice for a sweeter taste

 

Granola

375 ml (1 ½ cups) steel-cut oats (not instant)

125 ml (½ cup) raw almonds, cut in chunks if desired

15 to 30 ml (1 to 2 tbsp) coconut oil

30 ml (2 tbsp) maple syrup

5 ml (1 tsp) cinnamon

1 pinch of salt

80 ml (⅓ cup) Patience Fruit & Co Whole and Juicy Dried Cranberries

A deliciously nutritious smoothie topped with granola! The hemp seeds add both creaminess and protein.

Steps

  1. Place oats and almonds in a non-stick skillet over medium-high heat. Cook around 5 minutes, stirring often, until oats and almonds turn golden-brown.

  2. Add coconut oil, maple syrup, cinnamon and salt, then stir very well until oil has melted and oats are well-coated. Let cook 2-3 minutes, then remove from heat.

  3. To slightly-cooled mix, add dried cranberries. Set aside.

  4. For smoothie, combine all the ingredients in a blender and process until smooth and creamy.

  5. Divide smoothie between two bowls and top with granola mixture. Garnish with berries to taste.
