Cranberry Pecan Chia Protein Bites

Ingredients

½ cup almond butter

2-3 tbsp raw honey, depending on how sweet you like them

Pinch sea salt

1 tbsp chia seeds

¼ cup toasted sesame seeds

½ cup oats, gluten-free, if preferred

⅓ cup pecans, chopped

⅓ cup Patience Fruit & Co Whole & Juicy Dried Cranberries

⅓ cup cocoa nibs

Good things come in little packages; and these nutrient-dense protein bites are no exception! Loaded with protein, healthy fats, and carbohydrates, they’re a one-stop shop for all your energy needs. Fast-acting carbohydrates from the cranberries, oats, and raw honey give you quick access energy, providing a little nudge when you need it most. The protein and fat from the almond butter, pecans, chia and sesame seeds provide longer lasting energy stores that give you more enduring stamina as the day goes on. Add to that, their high antioxidant power, live enzymes, B vitamin content, and the fact that they’re ultra tasty, and you can see why they’re the perfect snack.

Steps

  1. In a medium bowl, mix together almond butter, raw honey and sea salt until combined. Sprinkle in chia seeds, sesame seeds, oats, pecans, cranberries and cocoa nibs, then stir together until fully incorporated.

  2. Form into a tight ball and chill in refrigerator for an hour.

  3. Remove and with a spoon or spring-loaded ice-cream scoop, scoop tablespoon size chunks of dough and form into balls. Place on a parchment lined baking sheet or in a sealable plastic container. Eat right away or put back in the refrigerator to chill.

Recommendations

Toasted sesame seeds add a nice, deep flavour. You can buy toasted sesame seeds in Asian supermarkets. Or if using raw sesame seeds, simply toast the sesame seeds in a dry skillet over medium heat for 3-5 minutes or until lightly browned, stirring occasionally. Some of the seeds will start to pop. Place the seeds on a sheet pan to cool down.

Bites keep for a couple of weeks in the refrigerator in a tightly-sealed plastic container.
