Dried Cranberry and Raspberry Frozen Yogurt

Ingredients

1 (113 g) bag Patience Fruit & Co Whole & Juicy Dried Cranberries, Sweetened with Apple Juice

60 to 100 ml (1/4 to 1/3 cup) 100% pure apple juice

500 ml (2 cups) frozen raspberries

180 ml (3/4 cup) plain or vanilla fat-free yogurt

Preparation time 10 minutes + 4 hours in the freezer Portions 6 to 8 servings

Dried cranberries and raspberries balance each other and offer a perfect combination of sweet and sour flavors. For this recipe, it is preferable to use whole and juicy dried cranberries because they have been only minimally dehydrated. This means they retain a lot of their softness and moisture, which is ideal in a recipe like this one. Sweeten the mixture naturally using 100% pure apple juice, and you’re done. All joy and no guilt!

Steps

  1. In a bowl, combine the cranberries with the apple juice and let rest about 5 minutes. Set aside.

  2. Using a blender or food processor, purée all the ingredients together. (The dried cranberries take more time to purée than the raspberries. For a delicious taste, we suggest you to keep cranberry chunks in the mixture.)

  3. Transfer the mixture to an airtight, freezer-friendly container. Freeze for 2 hours.

  4. Remove from the freezer and, using a fork, whip the mixture. Freeze for 1 hour or more and serve.

Recommendations

Add 3 oz lychee liqueur to the mixture to serve the frozen yogurt as a boozed-up dessert or a digestif. Perfect during heatwaves
