Fruit Lemon Waffles

Ingredients

1 ¾ cups all-purpose flour

2 tsp baking powder

1 ½ cups milk

3 eggs

2 tbsp sugar

¼ cup oil

1 tsp vanilla extract

1 tsp freshly squeezed lemon juice

1 bag (4 oz) Patience Fruit & Co Whole Berry Blend

Zest from 1 lemon

¼ cup lemon yogurt

Preparation time 20 minutes
Cooking time 10 minutes Portions 5 waffles

Here is a delicious recipe for perfectly crispy, light homemade waffles made with dried cranberries, wild blueberries, goldenberries, and tart cherries. What a great way to start a day! 

Ingredients

Steps

  1. Preheat the waffle maker to medium temperature.

  2. In a bowl, combine the flour and baking powder. Set aside.

  3. In a large bowl, whisk the milk, eggs, sugar, vanilla extract, and lemon juice together using an electric mixer.

  4. Gradually add the dry ingredients and mix until the ingredients are well incorporated and the mixture is smooth.

  5. Fold in the Whole Berry Blend and lemon zest.

  6. Pour the mixture into the waffle maker and cook for 8 to 10 minutes.

  7. Serve garnished with a spoonful of lemon yogurt, additional lemon zest, and fresh fruits.
